Raw Corn Chips with Adzuki Salsa and Guacamole

Eating Raw is so easy when you know how to make delicious food, especially yummy dishes like Nachos.

This dish is exceptionally delicious and is full of goodness. It is Vegetarian-Vegan-Sprouted-Paleo ( Fresh Corn is not a grain as grains are the dried cereal seed as corn is harvested fresh and when it is eaten raw it is not a grain but a vegetable.) We have used Adzuki sprouts in the spicy salsa and fresh organic corn to make the chips.

Lets get straight to this recipe so you can also enjoy this deliciousness.

Equipment: Food processor, Dehydrator

Corn Chips

Ingredients :

3 cups corn kernels *

1 yellow capsicum chopped

1/2 small onion chopped

3/4 cup of ground flaxseed

2 Tbsp lime juice

1/2 tsp chili flakes (Optional)

1 tsp crushed garlic or 2 cloves chopped

1 tsp himalayan salt

1 Tsp ground cumin

1/4 cup nutritional yeast

Black pepper

1 tsp 


Put into the food processor all the above ingredients except the ground flaxseed and black pepper, grind until well blended.

Add the flaxseed and blend again till it is well combined.

Spread the mixture evenly over two silicone dehydrator sheets, now with a knife lightly score the mixture into triangles.

Grind the black pepper evenly over the mixture, now dehydrate at 40 degrees  for 10 hours. Then peel off the silicone dehydrator sheet and finish drying on the mesh tray until they are crisp.

They store well in a sealed glass jar in your pantry, if you can stop eating them that is.

* Remove the corn kernels by slicing a sharp knife down the cob working your way around till all kernels are removed. This can be messy  as the juice can shoot out so I do this outside to save the clean up of my kitchen windows.

Adzuki Salsa


1 cup Wright Sprouts Adzuki Sprouts **

1 cup sun-dried tomatoes soaked for 1 hour

2 medium tomatoes chopped

1/2 small onion chopped

2 Tbsp lime juice

1 Tsp olive oil

1 clove garlic


Put all ingredients except the Adzuki Sprouts into the food processor and grind until smooth. Fold through the Adzuki sprouts and put into a bowl set aside.

2 avocados mashed

2 tomatoes diced

1 small red onion dice finely

2 Tbsp coriander finely chopped

2 Tsp lemon juice

1/2 tsp groung cumin

1 clove of garlic minced

pinch or cayenne 

Himalayan salt to taste


Combine all the above ingredients, in a bowl blending well by hand.

Fresh Greens


Small handful of curly kale

Small handful of coriander

Small handful of parsley

Salt & Pepper

1 Tbsp olive oil

1 Tbsp lemon Juice


Wash and finely shred all fresh greens, put in a bowl, in a small jar put lemon juice, olive oil and s&p lid and shake vigorously, pour over the greens and toss through.

How to Serve

This is very simple just take a Raw Corn Chip, add some Adzuki Salsa then some Fresh Greens and Guacamole, enjoy this as a meal or a snack.
